Asian Stir-fry with Soba Noodle

White man's easy made Soba Noodle Shrimp stir-fry.





Two packets is a lot of noodle. May want to try just one first. Its easy to add a second later.





Frozen Asian stir-fry mix.





Kikkoman, Garlic and Sriracha. (not pictured - sesame oil or olive works too)






Frozen shrimp is simple. You could do fresh if you want to complicate it.





Boil water. Fry up eggs (3-4) in favorite wok, scrambled egg style in oil.





Chopped egg in healthy amount of oil. (this oil will cook all the other stuff too)





I made a mistake here. The shrimp should be added last so I removed it.





Add a very healthy amount vegetables. When you think you've put in too many, add three or four more cups. I'm not kidding. It reduces down severely.





Stir stir stir, then let sit, then stir some more. Add some soy sauce as salt, and about a table spoon of garlic and some Sriracha. I just do some quick zigzags worth. Sriracha's spiciness doesn't disappear so do NOT over-do it. It adds a nice little kick. Stir stir stir. The goal is to cook it all and reduce a good amount of the juices but not down to zero juice as that coats and flavors the noodles.





With a few minutes before the water boils drop in frozen(or fresh) shrimp. They shrink and get tough as you cook hence why you don't want to start of with them like I did. (Not sure what I was thinking as I've done this many times.)





When water boils, drop in one or two packs of soba noodles.





5 quick mins later, they're done. Do NOT overboil.





Drain water, then put noodles in wok and mix. Personally I chop the noodles a bit because they're tough to mix with the shrimp and veggies.





Tasty goodness.

yup. i fill two tupperwares and it lasts me about 4-5 days. The only thing is to consider definitely NOT over cooking the shrimp as reheating will cook them more, but not bad at all.
Just add more soy sauce after microwave per your taste.

you can also substitute the soba noodles for brown rice, but I highly prefer the asian taste the soba noodles give over rice. plus cooked rice in microwave tends to dry out a bit, but it works.

you can also fry up chicken cubes instead of shrimp, or add both if you really want to get fancy.
just pan fry the chicken separately.
